The answer is Yes! This tastes as amazing as it looks!
I'm eating some right now. And, you're only 10 minutes away from having it for dinner too!
Ingredients:
1 piece of extra firm sprouted tofu, cut into 1" cubes**
4 baby bell peppers in assorted colors, sliced into 1" pieces
1 medium onion, cut into 8 pieces
1/2 Zucchini (or yellow squash), cut into 1" cubes
Salt and pepper to taste
For the marinade:
1 tablespoon of Soy sauce (or Tamari)
1 tablespoon of dark Agave
1 teaspoon of minced Garlic
also needed: kabob skewers
Directions:
Set your broiler and get it heated. You can also make this recipe on the BBQ grill. Arrange your veggies and tofu on the skewers, sprinkle with salt and pepper. Mix the marinade in a small bowl, until soy sauce blends with the agave. Very slowly, drip the marinade over the kabobs with a spoon until nicely coated. Covering all the veggies and the tofu. Place them on the broiler or grill, based on your preference. Cook them 5 minutes on each side. When you flip them, make sure to coat the second side with marinade too. Makes 4 Kabobs.
The kabobs are pictured on a bed of Whole Grain Medley (recipe found on this blog), with extra marinade dripped over them before plating. I like to serve mine with slices of lime, which when squeezed add a delightful zest.
**My whole-food meat-eating friends would like me to tell you this recipe is also amazing when made with chicken.
