Ingredients:
1 cup of Coconut Flakes
1 ½ cup of Oats (GF)
½ cup of Almond Meal
½ cup of Walnuts (or almonds, pecans, etc)
¼ cup of Pumpkin or Sunflower Seeds
¼ cup of Coconut Sugar (or sugar in the raw)
½ cup of Coconut Oil
¼ cup of Honey, locally sourced
1 teaspoon of Coconut ExtractDirections:
Preheat your oven to 400*F. Line a baking tray with parchment paper.
Melt the oil in the microwave for 30 seconds. Add in the honey and extract, and set aside. In a separate large bowl, add all dry ingredients. Using a spatula or large spoon create a crater in the middle of the dry ingredients and pour the liquid mixture into the crater. Thoroughly mix all ingredients.
Lay out the uncooked granola on the baking tray and brown in the oven for 7 minutes.Remove the tray from the oven and turn the granola with a spatula. Reduce heat to 200*F and bake again for another 12 minutes. Remove from the oven and let set. Do not remove the granola from the tray until has completely cooled and hardened.
