Ingredients:
1 cup of Quinoa, cooked according to the directions
1 can of Garbanzo beans, drained and rinsed
½ Red or Yellow Bell Pepper, finely chopped
½ Green Bell Pepper, finely chopped
1 clove of minced garlic
1 pinch of fresh chopped Cilantro
Salt and Pepper to taste
Prepare all ingredients and mix together well in a serving bowl. Cover with a lid or saran wrap; chill for 2 hours before serving.
