A light and delicious dinner that is ready in minutes!
Ingredients:
2 pieces of Extra-Firm Tofu
1 red bell pepper, thinly sliced
1 yellow bell pepper, thinly sliced
1 large orange
1/2 teaspoon of orange zest
1/2 teaspoon of orange zest
2 teaspoons of sesame seeds
1 tablespoon of dark Agave
1 tablespoon of Tamari (GF) or natural soy sauce
Also needed:
Olive Oil
Pinch of Salt and pepper
Pinch of Onion powder
Directions:
Tofu - Heat a griddle to medium-high heat. Rub a few drops of olive oil on each slice of Tofu. Sprinkle with salt, pepper, and onion powder. Grill until golden brown.
Orange Sesame Bell Pepper - In a small bowl, squeeze the juice of one large orange. Add the tamari and agave. Mix well. Pour into a frying pan over medium-high heat. Throw in the sesame seeds. Once it begins to bubble slightly, throw in the julienned (thinly sliced) bell peppers and zest with orange rind from the orange you just squeezed. Cook until the peppers are just tender.
Makes 2 servings, 212 calories each.
I serve this dish with one scoop of basmati rice (additional 160 cals) drizzled with the orange sesame reduction at the bottom of the frying pan. Yum!
