A protein and fiber powerhouse - This recipe is fast, tasty, and kid-friendly!
Ingredients:
1 can of black beans, drained
1 can of garbanzo beans (chickpeas), drained
1 can of kidney beans, drained
1 can of zesty diced tomatoes
1 medium onion, diced
2 tablespoons of peanut butter (O)
1 tablespoon of olive oil
Spices:
1 clove of garlic, minced
1 teaspoon of parsley
1 teaspoon of Italian seasoning (or equal parts oregano and basil)
1/2 teaspoon of smoked Paprika
1/2 teaspoon of chili powder
1/2 teaspoon of chili powder
1/2 teaspoon of cilantro
1/2 teaspoon Kosher salt
1/4 ground black pepper
1/4 teaspoon of cayenne
1/4 teaspoon dried red peppers*
*Add the extra red peppers if you like chili with extra sass.
Directions:
Drain all the beans and rinse them well. Heat the olive oil in a large skillet over medium-high heat. Place diced onion and minced garlic in the skillet and sear until the onions go clear. Add the peanut butter and stir until melted. Now add the diced tomatoes and all spices; mix thoroughly. Add the drained beans and reduce the heat to medium and simmer for about 10 mins.
Serve over a bed of sprouted brown rice (prepared as directed by bag) or your leftover Garlic Herb Couscous (wink). The perfect meal for a cold day or whenever healthy comfort food is on the menu!
