Simple. Easy. Nut-tricious!
Ingredients:
1 cup of old
fashioned oats (GF)
1/2cup of almond meal
1/4 cup of sugar in the raw*
1/4 cup of pecans pieces (walnuts and almonds work nicely too)
1/4 cup of melted coconut oil (O)
1tsp of almond extract
3 tablespoons of honey
Also needed: parchment paper
*I rarely use granulated sugar in my recipes. However, when I do I always use raw, unprocessed sugar; never white sugar. Sugar-in-the raw can be pricey but it's worth the extra money spent. If you're trying to be sensible about sugars but can't afford the good stuff, brown sugar will substitute well in my recipes.
Directions:
Preheat the oven to 350 degrees F. Line a cookie sheet or baking try with parchment paper. If you don't have parchment paper, simply spraying the pan with cooking spray will work. Do not use wax paper!
In a small bowl, warm coconut oil in the microwave until it's just melted. Depending on the strength of your microwave this is about 45 seconds. Add to it the almond extract and honey, and set aside.
In a separate bowl, pour all dry ingredients in and mix well with a flat spoon. using the blade of the spoon, make a crater in the mixture and pour the wet ingredients into the hole you've formed. Begin with folding the dry ingredients over and around the wet ingredients, until all the moisture is evenly distributed.
Pour the granola bar batter onto the parchment and pat it into a wide, flat square. Pressing down with the back of a spoon to flatten it smoothly. Place in the oven and bake for 20 minutes or until golden brown. Remove from the oven, lift the parchment paper from the baking tray and allow to cool and harden on a cooling rack. Cut into even sections and serve.
For chocolate detail: melt dark chocolate chips in a saucepan over medium heat. Stir continuously as the chips melt, never stopping. Once melted, remove from heat and use a soup spoon to drizzle chocolate liquid over the cooling granola bars. Allow to completely cool before serving.
Make this recipe you're own! Add your favorite nut or dried fruit. Just keep the same ingredient ratios. If you choose to add dried fruit, I recommend you use vanilla extract instead of almond extract for a brighter fruit flavor.
