The perfect
after-school snack. No fat added in the cooking!
Ingredients:
¼ cup of
apple juice
1 small bag
of golden potatoes
1 teaspoon
of Italian seasoning
1 teaspoon
of garlic powder
½ teaspoon
of ground black pepper
½ teaspoon
of kosher salt
Directions:
Preheat the
oven to 400 degrees F, and line a baking sheet with parchment paper.
Cut all the
potatoes into quarters. Place them in a zip lock bag and pour in the apple
juice. Shake until they’re thoroughly coated. Using a spoon, scoop the potatoes
out of the bag and lay them onto the parchment paper. Don’t dump them from the
bag, as the excess apple juice will soak your paper.
In a small
bowl, mix your dry ingredients together. Using your fingers sprinkle the
seasonings over the potatoes until they are all covered nicely. Roast in the
oven for about 20 mins or until golden brown. Allow them to cool before serving.
Versatile
and delicious! Serve these tasty bites as a healthy snack; use them as a french fry alternative with
Eden Tree Spicy Black Bean Burgers; or make them a southern breakfast treat by
pairing them with scrambled eggs.
