Banana Berry Oat Muffins


Simple! Tasty! Your family will have no idea they're healthy!

Ingredients: 
2 cups of old fashioned oats (GF)
1/4 cup of agave
3 ripe bananas
2 eggs
2 tsp vanilla (GF)
1/4 teaspoon of baking soda
1/4 teaspoon of salt*
1cup of blueberries or your favorite berry
white paper muffin pan liners
*Optional; the salt enhances the flavor of some berries like blueberries or cranberries.

Directions:
Preheat the oven to 350 degrees F. Place white paper muffin pan liners in a muffin pan.

Grind 2 cups of oats in a food processor until a light powder forms. Puree bananas and eggs gently in a blender for about 15 seconds, pour into a mixing bowl. Add vanilla and agave. Mixing with a spoon, add the oatmeal from the food processor a little at a time until thoroughly mixed.

Spoon muffin batter into the muffin pan liners, and gently press 4-5 berries (depending on size) into the batter of each cup.  Bake until muffins are golden brown (8-10 minutes).

Makes 12 muffins.
